Lentil sprouts are a tasty way to enjoy lentils and are as easy to grow as other sprouts. The flavor is somewhat like fresh peas; they go well in any salad you'd usually add sprouts to or in a sandwich with a spread such as hummus. You may even enjoy eating them on their own.
If cooked: Puy lentils have a flavor and color that are slightly distinct from other lentil varieties, and they also keep their shape much better when cooked. Because of the spicy flavor, nutty aroma, and hardy texture, Puy lentils are often eaten alone, added to salads, or made into soups.
Harvest when the shoot is the same size as the seed at 4 days. 25 seeds per gram - 1 gram of seed will produce 5g of sprouts.
